Pesto - Basil Recipes

(Pesto Alla Genovese)

Pesto Pasta
1 lb. Pasta
8 oz. Pesto Sauce
3 oz. Cream

Boil Pasta - drain - mix pesto and cream together - mix into pasta for hot pasta - or can be used for cold pasta salad. You can add diced red pepper, mushrooms, broccoli, string beans, potatoes or cauliflower into dish. Hot or cold (opt.).


Chicken Pesto (or Turkey) Salad
1 lb. cut up or diced Chicken or Turkey
6 oz. Pesto Sauce
2 oz. Mayonnaise
2 oz. Water

Use cooked chicken or turkey. Mix pesto, water into chicken or turkey - for cold salad - can also mix into cooked pasta. Same can be done with diced ham, pork or shrimp.


Chicken Breasts or Fish Fillets
1 lb. Chicken Breast (or Fish)
4 oz. Pesto Sauce
1 oz. Water or Cream

Cook chicken breast or fish. Mix pesto and water. Spoon a stripe down center of chicken breast or fish. Can be garnished with cooked vegetables (opt.). Add sun dried tomatoes and/or mushrooms (opt.).


Banquets - Use 1/2 Gallon Pesto Sauce to 6 lbs. uncooked Pasta.
